Spiced St. Germain Pear Sorbet

Fragrant pears meet Elderflower liqueur and spices in this fresh, adult sorbet.
Ingredients
  • 5 ripe Pears (Bartlett, Concorde or Comice)
  • 2 cups water
  • ½ cup Manuka Honey
  • 2 tablespoons fresh Lemon Juice
  • 2 teaspoons Lemon Zest
  • 2 whole Cloves
  • 2 whole Green Cardamom Pods
  • 3 whole Allspice Berries
  • ½ whole Cinnamon Stick
  • Fresh Ginger (small “finger” ½” long, peeled and sliced thinly)
  • 1 oz. ST~Germain Liqueur
  • 1 oz. Premium Vodka
Instructions
Prep
  1. Peel, core and cut pears into 1” pieces.
  2. Place cloves, cardamon pods, allspice berries and cinnamon stick in spice bag or bundle in two layers of cheesecloth, closing tightly with kitchen twine.
  3. Pre-freeze your ice cream insert if using.
Directions
  1. Place the pears, water, honey, lemon juice in medium saucepan.
  2. Add spice bundle and ginger slices to pears and bring to a low boil, then lower heat to simmer. Cook for 30 minutes.
  3. Remove the spice bundle and ginger and then let the pear mixture cool for 10 minutes before adding to blender or food processor.
  4. Blend mixture until smooth. (For extra velvety consistency, press mixture through a fine sieve.)
  5. Place pear mixture into a bowl, cover and chill for at least an hour or more before processing in your ice cream maker, you will want it very cold. Can be left overnight.
  6. Add liquors and measure total liquid, you will need 4 cups (add water as necessary) and whisk together before pouring into your ice cream maker.
  7. Continue with your manufacturer's instructions for freezing sorbets.
  8. Store in a covered container in your freezer
